I’ve been following a low carb diet for most of the past two years (almost three!), and I’ve discovered one of my major weaknesses — cookies. For the most part, I can avoid this temptation, but it’s so much more difficult around the holidays. That’s why I went on a hunt for the best keto Christmas cookies!

I’ve noticed that everyone does things a little different, so this list of keto Christmas cookie ingredients is tailored to my preferences. Play around with brands and different products to find what’s best for you. In the meantime, here’s what I keep in the pantry:

Kirkland Almond Flour: This little blue bag makes me so happy. I get mine from Costco and it typically lasts a month, depending on how much baking I do. Four of my kids are sensitive to gluten, so we go through a lot of this stuff. 

Almond Meal: It’s not the same as almond flour! This is more coarse and textured (we use it to make keto strawberry cheesecake crusts!). 

Monkfruit Sweetener: I’m really, really picky about sweeteners. I cannot stand any aftertaste, so the best thing ever is this monkfruit sweetener. It’s used in my baking and my morning tea, and you’d never guess it’s not sugar. It’s kind of unbelievable, really! 

Vanilla Extract: I need to just buy a whole jug of this because we use so much!

Aluminum-Free Baking Powder: Due to health concerns, we try to reduce the amount of aluminum in our diet. Plus, aluminum-free baking powder just makes things taste better, and I’m all about that!

Psyllium Husk Powder: This handy little ingredient may not be common in Christmas cookies, but I put it in my chaffles and keto dinner rolls to add some texture. Those are delicious this time of year! If I eat too much, I get some cramping though, so pay attention to your body’s reaction to it!

When I was a kid, I loved dunking Oreo cookies in milk. Now, when I try to eat them, I feel pretty gross. It’s a lot of sugar. This recipe yields about 10-11 cookies and each will only set you back 0.9g net carbs. YES!!!
